The family moved to England in 1983 for two years, where Adam attended St Georges College in Weybridge. He then moved to Hong Kong for three years, and later back to Australia, where he attended Wesley College, the same institution his brother Ben would later study at. It was during his time in Hong Kong that Adam and his brother learned their cricket at the Hong Kong Cricket Club Junior Gappers.
In 1989, Adam Hollioake was offered a contract by Surrey, and he made his first-class debut for the county in August 1993. He was awarded his county cap in 1995, during a season in which he scored 1099 runs and took 21 wickets. Adam's impressive performance earned him a place in the England team, and he went on to play for England in One Day Internationals.
