Born on January 1, 1994, in Brisbane, Queensland, Australia, Elliot began his rugby league journey with the Runaway Bay Seagulls in his junior years. He also explored rugby union during his attendance at The Southport School, before being signed by the Sydney Roosters.
Elliot's talent was evident from the start, playing for the Sydney Roosters' NYC team from 2012 to 2014. In 2014, he represented the Queensland under-20s team against New South Wales, and later made his NRL debut for the Roosters against the Cronulla-Sutherland Sharks, scoring a try on debut.
In 2015, Elliot resigned with the Sydney Roosters on a two-year contract. However, in 2016, he joined the Newcastle Knights on a contract until the end of 2017, after being released from the final two years of his Roosters contract. He made his Newcastle debut in round 14 against the New Zealand Warriors, scoring a try.
In 2017, Elliot left the Newcastle club after 23 games, and subsequently signed a one-year contract with the Gold Coast Titans starting in 2018. He made his Gold Coast debut in round 8 against the Cronulla-Sutherland Sharks, playing at centre.
In a surprising mid-season move, Elliot departed the Titans to take up a contract with the Leigh Centurions in the Championship until the end of 2018.
